Farm to school efforts have expanded rapidly in the United States since the 1990s. From only a handful of projects in 1996, there are now over 2,000 programs in 42 states that bring farm fresh products into school meals. That record of success refl ects a convergence of many factors, including concerns about rising childhood obesity and diabetes rates and growing interest in local foods. To continue to grow, farm to school programs must find ways to further develop their delivery systems.
That is the focus of this booklet. Specifically: How can farm to school programs continue to expand to reach more students and more schools? What are the best long-term strategies
for distribution in, for example, remote rural and large urban settings?
